We have users who bounce from computer to computer. I'd like to find a way
for outlook to just accept their logon and already know the server name.

newprof.exe (native to Outlook 2002 and better) should do this for you.

Newprof.exe is only installed with Outlook 2000. Besides some system dll's
such as kernel32, user32, it requires mapi32.dll which should be there from
when you installed Outlook. If those are in place, you should be able to copy
from the Office CD. If not, you need to copy the mapi32.dll to your target
folder to have newprof run correctly.
