Default 'Save As' file name

Whenever I save a document created from a Word template (.dot) file, the
default filename is 'Address.doc' or 'Wednesday.doc'.

Why is this?

It's been this way for as long as I've used Word and I've never specified
this nor can I find where Word keeps this information.

Open the template and look at File>Properties>Summary Tab. Is the title
"Address" or "Wednesday?" If so make in blank.

As Greg suggests, if there is text in the Title property of your template,
it will be suggested for the filename. Otherwise Word will suggest the text
at the beginning of your document up to the first punctuation mark or
paragraph/line break.
