Does anyone know how to open an item that has been
scanned so that I can edit the text?

Scanned items are pictures. You have to run an OCR program to extract the
text for editing.

If you have Office XP or later then there is the Microsoft Office Document
Imaging program that will do this. Otherwise, you may have an OCR program
bundled with your scanner.
