Why do some I send emails to receive my email text as an <<Untitled Attachment>> as the only thing under the Subject:xxx line, that they must click and open rather than in the body of the email

Depends on Outlook settings.
In Outlook, go to Tools, Options, Mail format.
You can choose HTML, Rich text, or Plain text as the
format to compose email in.
Additionally, you can choose to use Word as your email
editor, or your emial reader.
Depending on the collage of settings each person can have,
sent emails could look like anything on the other end. If
two machines have identical settings, emails should always
look fine.
Signatures often do the same thing.
