If an internet provider uses an SMTP server for sending mail, aside from
entering that address in Sending mail/SMTP server:___, what are the pros and
cons of checking OR leaving unchecked the related boxes on the "Advanced"
page for Entourage account settings?

The advnaced settings are only necessary for some SMTP servers (eg:
requiring SSL, using a special port etc).
If it works fine for you with the current settings, then you don't need
anything else,

What you have to enter in the advanced SMTP settings depends on what your
mail service provider requires. Most do require authentication, with a
smaller percentage requiring either SSL or a port other than the default.
