Excel Linked to Word, Saving Problem

I linked items from an Excel Sheet to a Word Document. These Excel Sheet was used as the source and needs to be used multiple times for different projects. The end result is the word document with all the data from the excel source file.

THE PROBLEM is When i finish one project and save as a different file name and start a new project, all the data from the 1st project(Word file) gets changed to the information in the excel source file with the information for the 2nd project.

Is there a way for me to save these files without them being changed everytime I start a new project? Besides Locking the links

Save the document with the default information as a template and create new
documents from the template. Does that fix it?
