After trying out the Office 2003 Beta from my MSDN set I
attempt to go back to the Office 2000 but now I can no
longer read mthe PST files as they have been altered and
now te PST appears to not be backwards compatible. Can
anyone help?

If not beware Office 2003.

No, heed the warning that 2003 gives you about the .pst file format.

Reinstall Outlook 2003 and export the file to a 97-2002 compatible format.
Then uninstall 2003/install 2000 and open that file using File->Open.
