Format of an email address in the To: field

In the To: field of an email I would like to display only the contacts name.
Right now I get the name & email address in < > ex: barry <[email protected]>
Would like to have only Barry displayed.

I have one contact where it displays only the name. All others display name
and email. Can not see the diference with the one that displays only the name.
