From field in Outlook E-mail message

You don't say which version of Outlook you are using.
This function is only available from Outlook 2002
onwards. If you are using Outlook 2000 or any other
earlier version, you won't have this facility

Not quite true -- if you're running Outlook 98 or 2000 in Internet Mail Only
mode, you should have a down arrow next to the Send button in a new message,
and clicking that arrow should give a list of available accounts to send
from. You can also use the File | Send Using command to select an account.
However, Outlook 98 and 2000 in Corporate/Workgroup mode does not make it
easy to select a sending account. If the original poster is using that
configuration, he may want to see if changing to Internet Mail Only mode
would be a good choice for him.

Incidentally, in Outlook 2002 and 2003, you would use the Accounts button in
a new mail message to select the sending account.
