Why would you expect Outlook help to have information on a Word feature? You
can turn it off in Word -- Tools | Options | General | Allow Starting in
Reading Layout.

thank you very much, this has solved the problem. Our IT guy didnt have much
of a clue so I thought asking a professional would be more helpful.

I didnt realise it was a problem with word as it only happened with outlook
email attachments.

But once again thank you very much.

Here's a related question: This week, I've had two word attachments that,
when opened, are being displayed in the Track Changes pane by Word. One doc,
I am sure that the authors did not want me to see the original version of
that document. Can I turn off the Track Changes so that it does not display
previous versions of documents, even if they might exist?

Thanks for your time and help.

Display the Reviewing toolbar and you can choose to show only the Final
version.
