In Word, click on Tools | Options | Edit | check the "Typing replaces
selection" box.

How? Well...think of it like this, when you highlight something your
cursor is stretched across the highlighted items. So when you type the
highlighted items are replaced with the text you type.

Otherwise it just does and something one must accept if they plan on
using a computer. Although you can change this behavior in Word by
going to Tools/Options/Edit and turning on/off "Typing replaces
selection".
