How can I protect parts of a document and not others?

I am working on updating a loan application in Word that has a few Excel tables integrated, it also contains a few drop boxes. I would like to protect the parts of the application that do not need any kind of response or explaination and keep the tables free for users to type in comments.

I've noticed that the drop boxes only work when the document is protected...is there a way to protect only certain parts of the document

Yes, you have to insert section breaks between the areas. These can be
continuous or can also include a page break. Then protect the document using
Tools > Protect Document > Forms > Sections.

What you are talking about is what Word calls an "online form." Check this
