How do I add shapes to Process Engineering Component Explorer?

I'm using Visio 2003.

Is there a way that I can use the "component explorer" and
"connectivity explorer" from the Process Engineering stencil with my
own shapes? What shapesheet attribute makes a shape appear on this
explorer?

The Process Engineering menu has a Shape Conversion command that should
enable this. You just need to assign a category.
