How do I find a £ sign in Microsoft Publisher, usual shows arrow

First, make sure the font you're using has a £ sign in it.

Second, make sure you don't have Font Embedding enabled. If you have
fonts embedded and subset, Publisher uses the subset fonts rather than
the local system fonts, so any characters that were not present (such as
a £ sign) at the time of embedding are unavailable. Only way to clear
this out is to disable font embedding and re-enable it (although I don't
recommend using it anyway - it causes more trouble than it's worth).

My stupid again... why not pick
Insert object symbol and then use the yada yada from there to scroll
thru various fonts to pick the ampersand you like

dang is my spelling that good!!!! yikes

The £ sign isn't an ampersand, it's a British Pound sign (the currency,
not the weight - although we don't use # for the weight either, we use
"lb.").

If the £ key (shift+3) on a UK keyboard doesn't generate the character,
the problem is either with the font or with the embedding. Insert >
Symbol won't magically find it (unless the font is REALLY poorly-made).

As I mentioned to Steve, the £ sign is Shift+3 on a UK keyboard. If the
problem were finding it at all, how would Chris have found it to insert
in his original message? :)
