How do I select incoming message encoding?

I think the encoding is determined by the sender not the receiver.

well thx, but the fact remains that using other languages than english may
cause some messages to be unreadable, untill entering the message, changing
it's encoding and saving the changes.

how can i make the encoding that fits me, the default one?

The sender chooses the encoding method, not the recipient. You could read
in plain-text mode. For HTML-formatted e-mails, you can change the view
encoding default by selecting whichever one you want in Internet Explorer
(View -> Encoding). Outlook uses IE's rendering libraries to display
HTML-formatted e-mails.

For outgoing mail, see Tools > Options > Mail Format > International
Options. Again, this will not influence anything coming in.
