How do you put videos behind text or other objects?

I've tried everything that I know but always have the videos overtake my
text. Very frustrating!

Sorry but the answer is you don't. In PowerPoint the video is ALWAYS in
front of all other objects when it plays.

I ran in to the same problem recently. (note Powerpoint 2007)
It was solved by having a screen cap of the last slide of the movie and
having it appear after the movie was done.
The movie was set to hide when not playing.
That way it looked like it paused on the last image and I just had the text
appear over that.

The only problem is that this only works if you are puting the text at the
end.
