How to apply highlighting if there is no HIGHLIGHT on the Format .

I cannot figure out how to apply highlighting to text on Word as when I go to
the formatting toolbar there is no HIGHLIGHT as per the instructions. Neither
does it appear as an option to add when you go to customize toolbars.
