How to turn off irritating features in 2008and add words to the spelling dictionary

The following questions are based on my recent frustrating experience switching from Word 2004 to Word 2008.

1. How can I get rid of the auto-fill feature that fills in names from my address book when I type the first few letters? It is especially irritating when I type my name and Word tries to fill in my company name. What about the feature that automatically inserts the time and date? I find this happening to me sometimes and I do not know what I am doing to cause it.

2. How do I add new words to the spelling dictionary instead of just clicking "ignore." Why is the "add" command always grayed out and unavailable in the menu? I never had this problem with Word 2004.

3. What is a quick way to indent a quotation passage in a smaller font size then go back to your standard text formatting afterward? For example, you are typing in 12 pt. with one inch side margins. When you go to the quote, you switch to 10 pt and indent an extra half inch on both sides. Is there an easier way to do this than manually setting and re-setting everything with your mouse? Is it possible to create some kind of macro to do it quickly?

Tools> AutoCorrect - AutoText, set the checkbox choices to your own
preference.

The best way to apply any formatting is by creating a Style that
incorporates the character & paragraph formatting attributes required. You
can assign a keystroke to a Style in order to apply it as you type. If
you're not familiar with the use of styles you can check Word Help on the
