How to unlock Excel spreadsheets created from Gallery Templates

I've created an Excel sheet based on one of the Gallery templates (Account Balance). However, I can't resize the columns because the sheet is locked somehow. When I try to check the box for "Show row and column headings", this option is greyed out. How can I "unlock" this sheet so that I can customize this instance of it in my workbook, hopefully without affecting the Gallery template?

Ledger sheets are very different than regular worksheets, as you've
discovered.

However, you should be able to resize the columns by hovering the cursor
over the border between columns (the cursor becomes a vertical line with
2 horizontal lines pointing left and right). Click and drag.

You can also set it manually using Format/Column/Width.
