Inbox mislabeling problem...

Until yesterday each new email noted who it was from... now it notes what
email address it is directed to, meaning I can't tell who it is from until I
open it.

I have "Arranged by" set at "Date" as I always do.

How do I reset this incoming tag to display who the email is from?

View-> Arrange By-> Custom...-> Reset Current View

Robert - Thank you for the suggestion. I easily reset it as instructed and the problem remains. I have Outlook 203. Do you have another option to try? Thanks. I'm a Robert too.

Could you explain a bit more where you see this "directed to" field? You
mean you see your own address there?
Then you probably have your view set to "Sent To" instead of "Messages".
You can change it via;
View-> Arrange By-> Current View

On the View menu, point to Arrange By, point to Current View, and then
click the view you want ('Messages').
