"localhost" default

Every time I shut down or restart my computer the email
defaults to "localhost" in the imcoming [mail.xxxxxx.com]
entry. I have to manually enter the correct location for
the email each time.

Disable the AV mail scanning.

It's your antivirus software. Check with the mfr. to see if they have a
newer version that scans mail in a more sophisticated fashion, or get
another product. I don't recommend disabling mail scanning outright, as I
think it's best to have more than one layer of AV protection.
