I just went to Office 2007 from Office XP. In earlier versions of
Outlook I could select View>Options and see a lot of details about the
message that are not shown in the message header. I cannot find this
in 2007. Is it unavailable?

Open the message, and at the bottom right-hand corner of the Options section
is a little button with an arrow - click that.
