Have installed and registered Visio Professional 2002,
when I place text within a shape and print, the print
comes back completely altered, for example, I type "CAT"
and it comes back as D&%. When I review via print preview
it appears as I have written it. Any assistance would be
greatly appreciated.

Are you using any of the printers mentioned in this article?

Even if your printer is different, you might try updating to the latest
print driver to see if that resolves this issue.
