No options for saving form data

If I create a new page, insert a form, insert a form field (textbox) and then
edit the form properties, the only option for saving the form data is 'Send
To Other'.

I've got a couple of other forms working, this just started. I've no idea
what is going on...

thanks for any ideas...

There is no such option on the Authoring page. The only option on the page
that is not turned on is SharePoint Services.
