Non Default Working Time

In MS Project does "non default working time" mean you choose hours other
than 9-5? I am looking at the general working time and I notice this.

Non-default working time is working time which is not the default - in
project the default time is 8-12 and 1-5 Monday through Friday.

So if you set a calendar with working time on Saturday or late hours on
Wednesday, that working time is non-default working time.
