Office Email.

I'm currently using Outlook 2003 - I want to know if it'll auto fill the to
field if i've never emailed someone from my contact list. I can see that it
auto populate/fills, If i've emailed that contact before.

Is there an option somewhere which I need to select?

Please advice.

The Auto Fill is independent of any of the address books including Contacts,
it is a cache of email addresses that you have sent, the cache holds a 1000
entries with new entries overwriting old. Go to Tools || Options || Email
Options || Advanced Email Options and select "Suggest Names while completing
To, Cc and Bcc Fields". For more information type "Automatic Name Checking"
in the Help menu of Outlook.
