Office XP - how to add tab to 'new office document' window?

I hope this is the right ng.
I have just started using Office XP Pro.
How can I add a tab or tabs to the 'New Office Document' window please?
Simple enough in office97, but I can't find it with office xp.
OS is xp home (probably irrelevant).
