Open "encoded text" document? How it gets encoded?

Word 2003: When I try to open a file, "encoded text" box appears with some
choices. However, no choice changes document to normal test. How do I turn
off encoded text and just open my documents the way I saved them - in normal
text? I've saved the documents normally and I'm the only person using this
computer, so I don't know why this is happening. Thanks.
