I have created an organisation chart from the temlate in
Visio 2002. Is it possible to have one person reporting
to more than one other person i.e. when I draw an extra
connector between shapes it removes the first connection?

This is a limitation in Visio 2002.
To get around this, do the following

1. Tools \ Options \ Advanced and uncheck "Enable Automation Events" and Ok
2. Use the Line tool or Connector tool to draw the relationship.
3. Turn "Enable Automation Events" back on again.
