Control Panel->Mail Icon->Highlight your Exchange
Mailbox->Properties->Advanced->Enable Offline Folders.

sorry - missed the "additional" - you need to setup profiles that connect to
the various exchange profiles, and then rename the .ost file to match your
profile.
