Outlook Subject line not showing

For some reason the subject line does not show on the
screen when we open an email. It is there for the list of all
emails but gone when we open the email. Any ideas how to fix
this little one?

You don't indicate what fixes you've tried, so I'll go for the obvious:

Open a new message, click "View" then "Message Header". This should turn on
the subject line for messages you write as well as messages you read.
