Remaining work for in progress task

I have an in progress task and I'm entering updates on a daily bases (via
View / Task Usage).

Two questions:
1) what is the status date and how does it relate to how I am entering data?

2) how can I add time remaining to a task without project rescheduling
everything? Ie, I don't care about resource overallocations due to added
required work.

1) Status date is used in earned value calculations. It's not relevant when
updating as you are.

2) Edit the work cells in the Usage view for periods without actual data.
This will always cause some recalculations, but if Project is re-scheduling
tasks because a resource is over-allocated: Select Tools, Resource Levelling
and make sure levelling is set to Manual.

When you say

How can this be a good approach?
Can you describe how or when ignoring overallocations would be a good thing?
