Schedule a meeting without it appearing on my calendar

I am the administrator. I schedule meetings for my organization but I do not
attend these meetings. How do I schedule meetings for people in my
organization and keep the meeting off my calendar?

AS far as I know, the meeting will always show on the meeting organizer's calendar.

What I'd do is to create the event in a calendar folder other than the
default and then send the event to the attendees as an attachment to an
email message. You can then delete it from your extra calendar folder (or
leave it there to keep track of it) and then can add it to their calendars
by dropping the attachment to them.
