Sharepoint Functions Break Down Over Time

About once or twice a week I can no longer open our STS
site through FrontPage. No documents can be uploaded or
sometimes opened. The only way to correct the problem is
to reboot the server. Usually when I try to diagnose the
problem I'll get a "Server is Busy" message. I'm always
unable to stop the iis services also - status
says "quitting" but never quits. Any ideas? Thanks.
