I have a small home business. I would like to use Microsoft Excel and Word
because I am familiar with it. Can I just purchase those two programs, or do
I have to purchase Microsoft Office and get everything (most of which I will
not use)?

No, you can purchase the individual components.

You might also do worse than look at this:

Open Office
www.openoffice.org

It's free and will do anything that the "average" Office user needs.

Word and Excel are available as standalone products, but it is
generally less expensive to purchase them as part of an Office
suite. For example, the manufacturer's suggested retail price of
Word 2003 and Excel 2003 is $229 each (total of $458 for the two
standalone products). For $399 msrp, you can purchase Office
2003 Standard (which includes the 2003 versions of Word, Excel,
Outlook, and Powerpoint). Or for $449 msrp, you can purchase
Office 2003 Small Business (which includes the 2003 versions of
Word, Excel, Outlook with Business Contact Manager, Powerpoint,
and Publisher). While you might not think you need the extra
applications at the present time, you might find them useful
later, and they're essentially free as compared to the cost of
purchasing Word and Excel separately.
