Styles vs. Manual Formatting

I read everywhere on Microsoft forums that Styles are preferable to manual
formatting. Am I understanding this correctly?

When I want to change a patch of text from roman to italic, for example,
what I've always done is use a keystroke combination, CTRL + SHIFT + I at
the beginning of the text I want italicized and then again at the end to
exit italics mode. I.e., I've used a sort of "toggle" key.

Under Styles, by contrast, I would assign a keyboard shortcut to the
character style italics, which I would use at the beginning of the text I
want to italicize. To get out of italics mode, I would use a keyboard
shortcut for body text.

I'm creating a really long document, and I've read that corruption problems
usually occur in the formatting codes of Word docs rather than in the text
itself. So I want to be sure that I'm formatting text in the best possible
way to lower the danger of content loss.
