Table of contents formatting error

After emailing a document the table of contents now includes far more than it
did - single lines of 'normal' (though no multi llines of text) and other
style heading. The field format switches are o "1-3" (plus the other usual
ones), however Word appears to ignore the instruction for what to include in
the TOC. Both computers are using office 2007. Font is Arial. Any ideas
please?

If 'normal text' is being picked up as a heading, it suggests something
wrong with the formatting. It used to happen in early versions of Word when
users used the DocMap to navigate documents, but this was fixed in Word
2003. Without being able to see examples, it is difficult to give an answer
though. Are you able to make a sample available?
