How can I change a document template location (url/path) for multiple files
at the same time? I.e.: a whole server directory full of files...?

Create a folder using whatever name you want, such as "Templates" wherever
is convenient in your server. Then open Word and go to Tools, Options, File
Locations. Click User Templates, Modify and navigate to the folder you
created. Select the folder and Okay back out.

I suspect you mean you want to change the attached template for multiple
documents. Unfortunately, you need to open each document to do this. Unless
the documents actually use features from the template after they are opened
(such as custom toolbars or macros), the simplest solution is to attach to
the normal.dot template. This is under the Tools > Templates and Addins
dialog. Be sure the checkbox to update styles is _not_ checked.

You can automate the process using vba. See the MVP vba FAQ for how to find
and replace for all files in a folder. This should give you a head start on
the code.
