Tracking original dates after changed in project

If the start date and/or end date is changed, is there any way to track the
original dates that were set initially ?

Yes, that is what Baselines are for. Once you reach an agreed schedule,
select Tools, Tracking, set baseline to save a snapshot of your schedule.
There are 11 baselines available

Just to add to what Rod said: It's helpful to add the Baseline Start and
Baseline Finish columns into your plan so you can readily see the differences.
