I am getting ready to track the progress of a project. I wasnt sure if
project incorporates more than just percentage complete. what happens if i
change the start or finish date or duration. will that be compared against
the bassline?

Hi,

I never ever use percent complete (only 100% if applicable) so there's much
much more indeed.
Actual Start, Actual Finish, remaining duration... and all is of course
compared to the baseline.
