Unwanted Contacts

Every email I get is saved with contact information. I do not want these
peoples contact information how do I turn it off? Thanks!

Outlook simply does not do that. If you think it is, state your evidence,
making sure you include your Outlook version. Give an exact description of
what you click and what you see during the process.
