Use a cell value to refer to another worksheet

I have a Workbook containing worksheets for each weekday,
each one named by day.

Can I use a cell value (which will be a day) to link to a
cell in the relevant worksheet?

e.g. On my Summary worksheet, I want to look at cell A2,
see what value it contains, such as "Wednesday", then use
that value to link to cell C3 in the Wednesday worksheet.
Of course, if it contained "Tuesday" the link would be to
the Tuesday worksheet and so on.....

Have you tried the indirect() function?

If you're looking at Cell A2 on your current sheet, and you want C3 o
the referenced sheet, try:

=indirect(A2&"!C3"
