Write a letter keeps style and formating from paraghraph to parag.

I start writing a letter put a title, then first paragraph, spaces second
paragraph. Try to make changes on title: center aligment and does it for the
whole letter, same with bold style, and any other feature. I want them
independent by paragraph, what do I do. I'using Office 2003. Thank you.
