Wrong display name in outgoing mail

I just helped a buddy build a new PC. TOTALLY new stuff. No old hard drives
or *.pst files brought from old PC. It has Windows XP Pro and Office 2003
installed on it.

We configured a junk POP3 account he keeps in his back pocket and used the
'test account' function in ACCOUNTS. The mail we get back has HIS email
(let's say (e-mail address removed)) address as the sender but his wife's name (say
Jane) as the displayed sender. Naturally he doesn't want to send mail to
folks that seems to come from her. --- I've looked at the email account and
only HIS name is on it.

Although he THINKS we created a user account (admin?) for her when we set
the machine up, I can only find HIS admin account when I look in the
ACCOUNTS area of the CONTROL PANEL. He thinks that her name is getting
pulled from her account we made when we installed WinXP Pro. I think maybe,
but possibly elsewhere.

Questions: Where IS her name coming from? How do I get HIS name displayed as
the sender?
