I am trying to find a why to archive off old projects so
they do not appear in the listing when logging onto
Project Server without losing any of the project data.
Does anyone have any ideas?

Martin:

Depending on your requirements, there are a couple of approaches that you
can take. 1) Create or modify a Category and/or permissions to hide the
projects from all or specified users. 2) Create an archive instance of
Project Server and move projects between production and archive.

Can you give me a little more information on option two
or point me to a resource that my have some documentation?

Martin:

There are Pros and Cons to this approach. You need to maintain consistency
between the Enterprise Global and Enterprise Resource Pool on both
instances. The following KB article will get you started.
