There are probably a few different ways but here's a pretty simple one.
Filter the file so it only shows those tasks that you want to assign the
single resource (the built-in filter "Using Resource..." works great for
this but you might want to modify to to not show related summary tasks).
Then either enter the resource directly in the Resource Names field
(e.g. Gantt Chart view) or use the Assign Resources icon to assign the
single resource to that task. Then select the Resource Names column and
do a fill down. Remove the filter and you're all set.
