can reply mail formatting defaults be changed?

When you hit reply in a message, often the default format
is 8pt Tahoma Blue. If you don't like it, you have to
manually change all the format settings, or so I believe.

Does anyone know of a way to change that default?

Yes, you can change this in Tools-> Options-> tab Mail Format-> button
Fonts...

The default is Arial by the way, not Tahoma ;-)
