change Properties entry

OfficePro03 and XP:

I just happened to notice by accident upon selecting the 'Properties' for
both a Word doc (and then checked an Access file) that the Organization
listed in properties is our old company name....we changed names about 3
years past....

Kind of not professional looking since our newer clients don't know our
older name....should they look at a document properties....

Where does one go to change that? While I can change it file by file - I
just want to change the underlying template or value so it defaults to our
current name going forward.......t.i.a.
