Is there anyway to drop the area code from my contacts - it always populates
manually...

No. Masking of phone numbers is hard coded, based on your dialing location.
I'm not sure why that would create a problem.

others locally when I am in certain areas

You mean from Outlook? That behavior is governed by dialing rules, not the
phone number format.
