Contacts subfolder view when composing message

I have a user who has subfolders under subfolders in their contacts.
When they compose a message and select "To," the contact folders do
not list in a subfolder view, they list all on the same level under
"Contacts."

They are enabled to show as Address books. Is there a way to list
them in a subfolder hierarchy when composing a message?

I don't believe so. The best you can do is to order them as you wish the
address book to search them when attempting to resolve an address. That's
under Tools>Options in the address book interface.
